eleven plates & wine Announces New Chef



Hot off the heels of another successful Austin Restaurant Week, eleven plates & wine continues to build buzz by bringing in internationally experienced Chef Joe Anguiano to head the locally owned restaurant. Chef Joe, a native of Los Angeles, brings with him both a palate and restaurant experience that are well-traveled. From working in his family’s tortilla factory as a child to the culinary-rich town of Saint Sebastian, Spain, Joe has spent his career working in highly acclaimed kitchens across the country.

Chef Joe comes to eleven plates from Uchi, and his philosophy towards food is one of cultivating relationships with local farmers and purveyors so there is always a focus on sustainability and freshness. He is excited about starting his newest challenge at eleven plates & wine and looks forward to bringing his experience and passion for food to the menu. He is currently at work with a new spring menu, with highlights including: wild caught striped sea bass with cipollini, fava beans and muscat grapes; amberjack with green apples, chive blossom, coriander blossom and lime yogurt; chilled sugar snap pea soup with heats of palm and Dungeness crab; and Fanny Bay oysters on the half

“I couldn’t be more excited to begin my Executive Chef career in Austin at eleven plates. Central Texas is abundant in natural resources, and I look forward to growing relationships with local farmers and purveyors to create fresh, innovative and sexy cuisine for the people of Austin,” says Chef Joe.

Joe was formally trained at the California School of Culinary Arts in Pasadena, and his early experience included working at Bistro 45 where he was in charge of food purchasing at the farmers market. It was here he learned to appreciate the value of using

preparation grew under the tutelage of Chef Michael Cimarusti, where he worked at the Water Grill in Los Angeles.

After a stint in New York City at the acclaimed Le Cirque and Miro in Santa Barbara, Joe decided to head for San Sebastian to work at Zuberoa, an acclaimed two Michelin-star restaurant known for its traditional Basque cuisine. Later, Joe returned home to Los Angeles to pursue catering for the movie industry, several local restaurants, and working with celebrity chef José Andres opening the much lauded SLS Hotel/Bazaar Restaurant in Beverly Hills.

Owned and operated by couple Mike and Kelly Swartz, the restaurant opened in September 2011 and quickly became a neighborhood classic. They feature over 120 carefully wines by the bottle and 33 wines by the glass, handpicked by owners Mike Swartz and Randy Laboy, both Certified Sommeliers. Open Monday -Thursday 11AM – 10PM, Friday and Saturday 11AM - 11PM, and Sunday 11AM - 9PM, with happy hours daily and weekend brunch.
