Finn & Porter Lightens Up With New Spring Menu - Austin, Texas




The lighter flavors of spring are in full bloom at Finn & Porter restaurant in downtown Austin.  Newly appointed Executive Chef Peter Maffei has created a number of inspired new dishes that showcase the best of Central Texas’ seasonal offerings, from radishes and peas to goat cheese and baby carrots.

Known for its quality seafood, sushi and steaks, Finn & Porter has a new twist on its modern American cuisine courtesy of Chef Maffei’s passion for elevating fresh, local ingredients in often unexpected ways.  Highlights of the new spring menu, both entrees and chef’s tasting plates, include a Pan-seared halibut with chive truffle popcorn, new potato and baby squash; Grilled asparagus with truffle poached egg, chorizo and arugula; Grilled artichoke with a parmesan panna cotta and Upland cress; Feta creamed corn served alongside the seven ounce filet with haricot vert and black peppercorn demi; and Pan-roasted Gulf redfish with butter poached radish, fennel, tomatoes and fingerling potato.

“Local ingredients have always provided the spark for my creativity and there’s no lack of amazing offerings around Austin and Texas each Spring,” said Chef Maffei. “Partners like Farm to Table help me bring ideas to life such as the orzo ‘risotto,’ chive, corn and chervil that accompanies our Gulf shrimp tasting dish.”

Finn & Porter also features signature sushi dishes from sushi chef Triet Huynh – favorites include the Fire Roll and Lobsteryaki. Sushi Happy Hour specials are available every Monday through Friday from 5pm to 7pm.
