Sevy's Spring Wine Dinner (4/30) - Dallas, Texas

Monday, April 30, 2012, from 6:30 PM - 9:30 PM
Sevy's Grill
8201 Preston Road
Dallas, TX 75225
214-265-7389

Sevy's Spring Wine Dinner
Monday, April 30th, 6:30pm
$65 per person (plus tax and gratuity)

Chef Jim Severson has crafted an exquistite menu for this month's wine dinner that takes advantage of the vibrant flavors of fresh spring produce. These dishes have been matched with wines from some of California's finest producers to showcase their affinity to compliment Chef Sevy's artistry, including Margerum Sauvignon Blanc Sybarite 2010 - one of The Wine Spectator Magazine's Top 100 Wines of 2011.

Seating for this event is limited, reservations required, make yours today at (214) 265-7389 or SevysCatering@aol.com. Reception begins at 6:30, dinner at 7:00.

Menu
Shaved Pecorino Crostini with Minted Pea Puree
Margerum Sybarite Sauvignon Blanc 2010
"Crisp, clean and smooth, with notes of mango, melon, peach and tangerine, that are vibrant and juicy, supported by a refreshing acidity and mineral details, with plenty of focus." 91ws  2011 Wine Spectator Top 100 - #82

Salad of Crispy New Potatoes, Fresh Ramps & Frisee
with Soft Poached Egg, Lardons & Asparagus Vinaigrette
Steele Rose of Cabernet Franc 2011
A dry Rose for red wine lovers. Crisp and refreshing, with strawberry and mango flavors and a slightly spicy finish. Shows true Cabernet Franc character in a cool and delicious presentation.

Skillet Seared Rabbit Sausage
with Spring Fennel Relish & Whole Mustard Cream
Margerum M5 2009
Complex, with a mix of ripe dried berry, fresh earth, mineral, tobacco, sage and cedar notes. Full-bodied, ending with a spicy savory edge. Syrah, Grenache, Mourvèdre, Counoise and Cinsault.

Lamb Chops with Crispy Goat Cheese Potato Cake
Creamed Leeks & Toasted Shallot Sauce
Ninety + Cellars 2009 Napa Cabernet Sauvignon Lot 48
This Cabernet comes from a carefully chosen selection of fruit harvested from a handful of distinctive Napa Valley vineyards. Aromas of blackberry, dried cherries, and cassis lead into more cleverly subdued traces of tobacco, tea, and forest floor. The wine is full-bodied and rich with lush tannins. A touch of vanilla, clove and baking spices emerge in the finish.

Lemon Curd Tart with Chantilly Cream
Beaumalric Muscat de Beaumes de Venise 09
The wine is made by arresting fermentation before all of the natural sugars have been consumed - done by adding a small amount of neutral spirits, much in the same way a vintage port is made. This unctuously-textured, thick, juicy, sweet dessert wine is crammed with peach/apricot fruit. The knock-out nose soars from the glass. On the palate, the flavors are pure, rich, and thick, but refreshingly vibrant and lively

BREAKING AWAY Feast at Arthouse - MS150 Fundraiser

MS 150 Fundraiser: BREAKING AWAY Feast
Weds, May 9 at Arthouse

For the past three years, Alamo founder and CEO Tim League has participated in the BP MS 150 marathon bike ride from Houston to Austin.  The two-day event is organized by the National Multiple Sclerosis Society to raise awareness and funding in the battle against MS.   This year, we’ve enlisted a team of 15 intrepid Alamo employees to participate in the ride, and Team Alamo wants YOU to help us meet our fundraising goal!*

Join us on Wednesday May 9th for an outdoor screening of BREAKING AWAY – the grand-daddy of all cycling films - and a new signature feast prepared by Alamo Executive Chef John Bullington.

Presented on the rooftop of the magnificent AMOA/Arthouse facility at the Jones Center, the evening will begin with a cocktail reception, sponsored by Bulleit Bourbon, featuring a signature recipe from Alamo Drafthouse Beverage Director Bill Norris.  Following the reception, our guests will be treated to a five-course meal with wine pairings courtesy of Team Alamo sponsors US Foods and Glazers.  The menu is appropriately themed to mirror the journey of BREAKING AWAY’s main character, who masquerades as an Italian youth in order to realize his competitive cycling dreams:

Antipasto
Foccacia with truffle oil, fresh baby artichokes, pine nuts, parmesan.  Paired with LaMarca Prosecco.

Prima
Fennel caviar, cippoline onions, julienne charred chicory, yellow pepper, ricotta, moscato vinaigrette.  Paired with Stellina di Notte Pinot Grigio.

Secondo
Porcini stuffed squid braised in white wine and smoked tomatoes on linguini.  Paired with Arancio Dalila Grillo-Viognier.

Terzo
Rosemary smoked beef tenderloin with marsala reduction, polenta fritte, zucchini gratin.  Paired with Mezzacorona Teroldego Riserva

Fin
Pear tart tatin, cinnamon mousse.  Paired with Castello Del Poggio Moscato D’Asti.

Cocktails and an appetizer will be served from 7pm until sunset, when the screening and feast will commence.  AMOA/Arthouse is located at 700 W. Congress Avenue, at the intersection of Congress and 7th Street.  Valet services will be available.

Unable to attend the screening?  Don’t despair - there are plenty of other ways to support this great cause!   You can also donate to Team Alamo at a variety of different levels for a chance to win some amazing prizes including a VIP Fantastic Fest Badge, Mondo BACK TO THE FUTURE Poster Set, A Night at the Alamo, and a Custom Team Alamo Biking Jersey. See the full details HERE.

*Even though the MS 150 was this past weekend we still have until May 20th to meet our full fundraising goal!!

Trento - Bringing Northern Italian Cuisine to Austin

Open since December, Austin¹s newest Italian restaurant, Trento, channels the delectable culinary experience from Trento, Italy. Austin-native and CIA graduate Chef Alex Kahn (formerly of Congress and Roaring Fork Restaurant) and European trained Chef Andreas Exarhos (formerly of Congress) have teamed up and created a menu that focuses on fresh, casual Italian dining using the highest quality of food and ingredients.

“Dre and I have worked together previously and it was a great experience so we decided to go out on our own and create something new for Austin,” says co-head Chef Alex Kahn. “Trento is a Northern Italian restaurant that has given us the opportunity to be at the forefront of Italian cuisine in the Austin area where we specialize in fresh Italian food and utilize only the best ingredients.”

“A lot of our dishes are fairly traditional, but we do put a special twist on our dishes. We aim to stay true to Italian cuisine, seasonality and very simple, rustic food,” says co-head Chef Andreas Exarhos.

Trento is open for brunch, lunch and dinner. Hours are 11:00am to 9:00pm on Mondays to Thursdays, 11:00am to 10:00pm on Fridays and Saturdays and 10:30am to 9:00pm on Sundays. This also includes a private dining room for meetings and special events, incredible take-out options daily and an extensive happy hour during the week.  Trento offers live music in the bar, the first ever in Westlake, Wednesday through Saturday evenings with several talented and locally known musicians.  Bar hours during these evenings extend later.

Sample menu items include, Cheese Ravioli with Lamb Sausage, Gnocchi with Slow Roasted Pork, Linguini Alle Vongole, Brussels Sprouts Pizza and Grilled Salmon, as well as a gluten-free menu, Neapolitan pizza and fabulous desserts. Menu also offers Chef specials daily.

Guests can enjoy a full bar complete with an extensive wine list, tantalizing cocktail menu and fabulous Prosecco offerings in this inviting environment with very reasonable prices.

Trento is located on the corner of Westlake Dr and Capital of Texas Highway at 3600 N. Capital of Texas Highway, Building D. For updates, go to Trento360.com and follow on Facebook @trento and on Twitter @Trento360.

NOW OPEN: Fresa's Chicken Drive-Thru Now Open on North Lamar

Seasoned restaurateurs, Larry McGuire, Tom Moorman, Tracy Overath and Margaret Vera opened Fresa’s Chicken Al Carbon on April 16th, at 11a.m. at 915 North Lamar Boulevard, serving signature, high quality take-out meals, ready in minutes and served through one of Fresa’s convenient drive-thru or take-out windows.

Succulent Mexican-inspired chicken is the spotlight.  Unlike common supermarket rotisserie chicken, Fresa’s is slow-grilled over hardwood charcoal to lock in robust flavors and juices, giving it a rich, deep smokiness and savory charred skin. Served as a complete meal, whole chicken dinners ($23.00) or half-chicken dinners ($14.00) are perfect for busy couples or families and come with rice, beans, grilled onions, jalapenos, salsa and tortillas.

“The most important part of this concept to us was to serve a chicken we could be proud of. Peeler Farms chickens are locally raised, allowed to pasture, fed a 100% vegetarian diet, never given any medicine, and processed by hand on a family owned farm. Not only can you feel good about eating this chicken, but the quality is amazing, it is really a unique and exciting partnership between a grower and a restaurant.” says Larry McGuire.

Charcoal grilled chicken comes in two flavorful marinades: the classic Numero Uno, in a blend of achiote and citrus, and the Numero Dos, seasoned with fresh oregano and cracked black pepper. Sides included in the meal include charro or black beans, Mexican or white rice, corn tortillas and red and green salsas.

Fresa’s Chicken Al Carbon is open daily from 11am until 11pm. For more information visit www.fresaschicken.com and become a fan on Facebook and Twitter for the latest updates.

Chef Joe, a native of Los Angeles, brings with him both a palate and restaurant experience that are well-traveled. From working in his family’s tortilla factory as a child to the culinary-rich town of Saint Sebastian, Spain, Joe has spent his career working in highly acclaimed kitchens across the country.

Chef Joe comes to eleven plates from Uchi, and his philosophy towards food is one of cultivating relationships with local farmers and purveyors so there is always a focus on sustainability and freshness. He is excited about starting his newest challenge at eleven plates & wine and looks forward to bringing his experience and passion for food to the menu. He is currently at work with a new spring menu, with highlights including: wild caught striped sea bass with cipollini, fava beans and muscat grapes; amberjack with green apples, chive blossom, coriander blossom and lime yogurt; chilled sugar snap pea soup with heats of palm and Dungeness crab; and Fanny Bay oysters on the half

“I couldn’t be more excited to begin my Executive Chef career in Austin at eleven plates. Central Texas is abundant in natural resources, and I look forward to growing relationships with local farmers and purveyors to create fresh, innovative and sexy cuisine for the people of Austin,” says Chef Joe.

Joe was formally trained at the California School of Culinary Arts in Pasadena, and his early experience included working at Bistro 45 where he was in charge of food purchasing at the farmers market. It was here he learned to appreciate the value of using

preparation grew under the tutelage of Chef Michael Cimarusti, where he worked at the Water Grill in Los Angeles.

After a stint in New York City at the acclaimed Le Cirque and Miro in Santa Barbara, Joe decided to head for San Sebastian to work at Zuberoa, an acclaimed two Michelin-star restaurant known for its traditional Basque cuisine. Later, Joe returned home to Los Angeles to pursue catering for the movie industry, several local restaurants, and working with celebrity chef José Andres opening the much lauded SLS Hotel/Bazaar Restaurant in Beverly Hills.

“We couldn’t be happier to welcome Chef Joe into the eleven plates’ family. His clean, inventive dishes are just what the neighborhood ordered, and we look forward to watching his star grown even brighter as the Executive Chef of our restaurant,” says owner Kelly Swartz.

Texas Monthly Receives Two National Magazine Award Nominations

Magazine Recognized in General Excellence and
Leisure Interests Categories
The American Society of Magazine Editors (ASME) announced today that Texas Monthly has received two nominations for the 2012 National Magazine Awards. The magazine received nominations for General Excellence and Leisure Interests. Known as the Ellies, the awards will be presented on Thursday, May 3, in New York.

Texas Monthly is a finalist in the General Excellence category for its April, October, and November 2011 issues. The cover stories for the three issues submitted were about food, music, and a classic Texas football rivalry.

The magazine was also recognized in the Leisure Interests category for its April 2011 issue cover story, “Home Plates,” a feature focusing on the heritage, splendor, and preparation of the ten dishes every Texan should be able to cook from scratch.

On hearing of the nominations, Texas Monthly editor Jake Silverstein said, “It’s a thrill to be nominated for these awards and enjoy some recognition from our peers in the industry. But what we really want is to bring home the hardware, so get back to me in May."

Since its first issue in February 1973, Texas Monthly has won eleven National Magazine Awards and received 61 nominations. The National Magazine Awards, established in 1966 by ASME, are administered by the Graduate School of Journalism of Columbia University and sponsored by ASME. The awards are widely considered to be the magazine industry’s most prestigious recognition, equivalent to the newspaper industry’s Pulitzer prize.

Texas Monthly was founded by Michael R. Levy in 1973 and has a monthly readership of over 2.4 million, reaching one out of every eight Texas adults. Texas Monthly is owned by Emmis Communications Corporation, an Indianapolis-based company that owns other magazines and radio stations. Visit the magazine online at texasmonthly.com.
