One’s nose fills with tropical fruits, citrus, hazelnut, and fresh brioche. The color recalls a field of straw. On the palate this beauty carries the ripe fruit, tropical notes and rich texture just a step further. We taste the bottom layer of a pineapple upside down cake: oven warm fruit, baked brown sugar and luscious cake. Its power is undeniable. The wine was vinified using traditional Burgundian techniques, aged on the lees for 17 months in French oak, then bottled, unfined and unfiltered, on February 16, 2010. Only 229 cases were produced.

Lemon peel, flowers, spices and crushed rocks are some of the notes that flow from this taut, mineral-driven wine. Hints of lemon, mint and jasmine reappear on the crisp, delineated finish. Anticipated maturity: 2012-2020.
The Chardonnay grapes came from 10 to 22-year-old vines harvested from nine vineyard blocks that each have their own identifiable qualities. The vineyards (5 different clones) are planted at an average elevation of 1,420 feet on Atlas Peak.

Central Texas' Chefs Go Hog Wild for 2nd Annual Wine & Swine, Nov. 4 - Austin, Texas


Central Texas' top chefs will go whole hog for the Austin Food & Wine Alliance's 2nd Annual Wine & Swine on Sunday, Nov. 4, 1 - 5 pm, with a dozen chefs preparing whole pigs for an authentic pig roast raising funds for culinary grants. Tickets go on sale today with an early purchase discount through Oct. 8 at AustinFoodWineAlliance.org.

Chefs will prepare whole Berkshire pigs in their own unique culinary styles for the outdoor event that includes live music by Warren Hood and The Goods; premium wine tastings, spirited cocktails, craft brews and plenty o' pork tastings. Early purchase discount tickets are available to the first 100 ticket purchasers for $60 and then pre-purchase tickets are $75. Tickets will be sold at the door for $95.

Pioneer Farms, just 15 minutes north of downtown Austin, provides the pristine historical backdrop as chefs, winemakers, spirit makers and craft brewers showcase their cuisine and pairings in the 1880s town square replica. The farm is situated on 90 pristine wooded acres and showcases the life and community of early Texas settlers.

Readying to roast pigs both in-ground and above-ground and provide other pork-centric delicacies are Central Texas' celebrated chefs including: Alma Alcocer-Thomas, El Alma; John Bates, Noble Pig; John Bullington, Alamo Drafthouse; Jason Dady, Bin 555 (San Antonio);  Bryce Gilmore, Barley Swine; Jack Gilmore, Jack Allen's Kitchen; James Holmes, Olivia's & Lucy's Fried Chicken; Eric Lucas, Whole Foods Market®; Charles Mayes, Café Josie; Zack Northcutt, Swift's Attic; Rebecca Rather, The Pink Pig; Josh Watkins, The Carillon; and Andrew Wiseheart, Contigo.

And to really get the competition squealing, the Texas Pork Producers Association will award a $1,000 prize to the chef named Greenling Fan Favorite. Attendees will vote via Twitter and text vote on their favorite dishes to determine the winning chef.

Wine & Swine is a fundraiser for the Austin Food & Wine Alliance, Central Texas' newest culinary non-profit, which is dedicated to fostering awareness and innovation in the Central Texas food and beverage community. Through a vibrant grant program, the Alliance will award $20,000 in grants in 2012 for chefs, farmers, artisan producers and culinary nonprofits for projects focused on culinary innovation and community giveback. Grant applications are being accepted now through Oct. 19 with additional info at AustinFoodWineAlliance.org.

As the key beneficiary of the Austin FOOD & WINE Festival, the Alliance features educational programming and culinary events showcasing Central Texas' chef talent along with artisan and local producers, world-class wine and spirit makers, and craft brewers. 

The pig roast attracted a near sold-out audience in its first edition and is expected to sell out this year with estimated attendance of 500 enjoying an afternoon on the farm with innovative pork dishes, an amazing sampling of extraordinary wines and spirits, a hearty selection of local craft brews and foot-loose live music for a full-blown party o'pork. Tickets are available for online purchase now.

Wine and Swine also will feature a selection of finalists from the inaugural 2012 CultureMap Tastemaker Awards, a competition recognizing and celebrating the best of Austin's culinary and cocktail scene. A percentage of proceeds from the annual Tastemaker Awards benefit the Alliance's mission and grants.

Wurstfest 2012 Opens November 2, 2012 - New Braunfels, Texas

Wurstfest 2012, a unique celebration rich in German heritage and full of Texas fun, opens Nov. 2 and continues through Nov. 11, offering 10 days of family-style fun on the Wurstfest grounds along the Comal River in Landa Park in New Braunfels. The festival features the sounds of more the 40 bands playing at four different venues, a carnival, tasty German/Texas foods, the Marktplatz shopping area, and the opportunity to visit with friends while enjoying the view of the scenic Comal River.
Wurstfest officially kicks off with opening ceremonies at 5 p.m. Friday, Nov. 2, in the Wursthalle with the “biting of the sausage” and the ceremonial tapping of the keg. The Comal Community Band and Alex Meixner will provide music on opening day from 4 to 5 p.m. For a complete list  of entertainment, visit www.wurstfest.com. Admission to the grounds on Nov. 2 is free from 4 to 7 p.m.
Wurstfest President Martin Allen described Wurstfest as a community reunion.
“Adults remember the days when they went to Wurstfest as a kid, and now, they come back with their families. It is very family oriented,” he said.
Accompanying Allen at this year’s Wurstfest are Al Leach as Festival Chairman and President elect and Frank Witting as Grosse Opa.
The festival began in 1961 as a promotional event for the city’s sausage-making industry. It quickly grew from a two-day event into a week-long event, before expanding into a 10-day affair.
This past year, Steltzenhaus (the “stilt house”), opened as a fourth venue at the festival. Patrons can dance to live bands at the venue that sits above the banks of the Comal River. They also can still enjoy listening to bands at Wursthalle, Das Grosse Zelt (the Big Tent) and Das Kleine Zelt (the Little Tent).

Returning favorites to this year’s Wurstfest include the Jimmy Sturr Orchestra, Alex Meixner, die Schlauberger, Master Yodeler Kerry Christensen and The Squeezebox, just to name a few. Die Bayrische 7 (The Bavarian 7) will be traveling from Munich to perform at Wurstfest. The band is comprised of seven female musicians.

“I would describe this band as having the same type of high-energy band as Alex Meixner and Die Schlauberger,” said Marc Allen, entertainment chair.

For those ready to kick up their heels, the Waltz Contest takes place the first Sunday, Nov. 4, of Wurstfest. The Polka Contest takes place during the second Sunday, Nov. 11, of Wurstfest.
Wurstfest 2012 will offer plenty of festival food favorites including kartoffel puffers (potato pancakes), potato soup, bratwurst, Wurst tacos, chicken-on-a-stick and sausage sampler plates. Dessert booths include strudel, funnel cakes and fried Oreos.

Kinderhalle, hosted by the City of New Braunfels Parks and Recreation Department, provides an evening of entertainment for the younger ones attending Wurstfest on both Saturday nights (Nov. 3 and Nov. 10) during Wurstfest. As part of Kinderhalle, several family events take place during Wurstfest as well.

The Circle Arts Theatre will present its annual Wurst melodrama, “Alice in Wurst-erland,” as part of the festival – encouraging the audience to throw popcorn and boo the villain.
Wurstfest patrons also will be able to take part in a Veterans Day Salute on Nov. 11 honoring those who are serving or who have served in the military with a presentation of colors, military songs medley and the playing of “Taps.”

Several area-wide, Wurst-related activities take place during the festival including the Wurst Tour de Gruene, Wurstfest Regatta at Canyon Lake, the Wurstfest 10K Walk hosted by the New Braunfels Marsch-und Wandergruppe and the Wurstfest Skat Tournament at Landa Haus.

Admission to the festival is $8 at the gate; and children ages 12 and younger will be admitted free at all times. Admission is free from 3 to 7 p.m. Nov. 2 and after 3 p.m. on Nov. 11. Group rates, advance discounts and special weekday promotions are available.

Patrons can take advantage of the Park and Ride custom shuttle service provided by Rockin’ R River Rides. The service allows patrons to buy admission tickets ahead of time and tickets for use on the grounds prior to their arrival on the grounds.

The Houston based non-profit Friends for Good, will host a Green Beans and Guacamole cookbook signing at 5 p.m. on Tuesday, September 25, 2012 at Américas featuring Executive Chef David Cordúa and other top chefs and restaurants showcased in the cookbook-for-a-cause. 

With a limited number of copies left, Houston foodies who have not already bought their copy of Green Beans and Guacamole will have the chance to purchase the limited edition cookbook. Guests will mix, mingle and swap stories with a star-studded lineup of chefs and restaurants including David and Michael Cordúa of Américas, Abbas Hussein of Sorrento Ristorante, David Denis of Le Mistral, Jamie Zelko of Zelko Bistro, Tony Mandola of Mandola’s, Chef Kiran Verma of Kiran's Restaurant and Bar, Randy Evans of Haven and Hugo Ortega of Hugo's & Backstreet Café.
