Finn & Porter, located in the Hilton at 500 East 4th Street between Red River and Neches Streets, has planned a special Thanksgiving menu for those looking to enjoy a hassle-free holiday on Thursday, November 28th. In lieu of dealing with grocery store crowds and slaving over a hot stove, guests can relax and enjoy the company of friends and family while indulging in a traditional, stylish spread at Finn& Porter.

Chef Peter Maffei’s three-course menu will be available from noon to 8pm (bar opens at 2pm) - $45 for adults and $20 for kids. The first course will feature an option of Butternut Squash Soup or a Texas Winter Green Salad with cranberries, goat cheese, and pistachios, served with a smoked pecan vinaigrette.  The Thanksgiving Plate - the main course - will feature all of the traditional favorites with a Finn & Porter twist -- slow roasted turkey, green bean casserole, sausage-apple stuffing, mashed potatoes, candied sweet potatoes and cranberry relish.  Of course, guests must save room for desert with an option of a Bourbon Pumpkin Pecan Pie or Nutella Bread Pudding served with a house-made brown butter ice cream and hazelnut ganache. Definitely not your grandmother’s bread pudding!  Wine pairings for each course are available upon request.

Apricot Cranberry Stuffing

This is a wonderful recipe which will definitely be a traditional hit with your family and friends.

Ingredients
  • 1 loaf whole-meal bread
  • 1 large onion finely chopped
  • 1/2 cup chopped celery
  • 1 cup chopped peeled apple
  • 3/4 cup dried apricots (chopped)
  • 1/2 cup dried cranberries
  • 1 large grated zucchini
  • 2 eggs
  • 1/2 cup olive oil
  • 6 sprigs fresh thyme
  • salt and pepper to taste (good when peppery)

Directions
  1. Crumble or cube bread. Add all ingredients and mix well. It should be moist and sticking together.
  2. Place it into a foil loaf pan, cover with silver foil (may refrigerate for up to 8 hours).
  3. Bake covered in 325°F oven for 1 hour. If drier stuffing is desired: uncover and bake another 10-15 minutes.

Oil-less Fried Turkey

OK. I now have your attention. I wouldn't have believed it if I hadn't done it. I purchased the Char-Broil Big Easy to cook our Thanksgiving turkey. Using a new cooking method for a big family meal is not a great idea, but I did it anyway.
I purchased the Big Easy at Lowe's and got it home. It took me about 30 minutes to assembly it and 15 minutes to season the cooking chamber.
After preparing the 14+ lbs turkey for cooking, I placed it into the cooking basket and started the Big Easy. The controls are very simple. One knob is used to turn on the gas. There are only two settings, on and off. The second knob is the ignites the gas. Yes, it uses propane.
From the directions and information given, it takes about ten minutes per pound to cook a turkey. It took about two hours to cook the turkey to the proper doneness.
The skin was crispy like a fried turkey. I have had fried turkey and there is a difference between one done in a deep fryer and this one, but if you have a problem with cholesterol, I don't think you want to fry a turkey. Besides, the cost of oil has skyrocketed and it is dangerous to use 375 degree oil on a turkey. I have friends who have fried turkeys and they do a great job and haven't burned down their homes.
If you are like me, you might consider this method for cooking. Besides, it cooks chickens, beef, ribs, etc. For Christmas, I will be cooking a seven-pound prime rib roast with the Big Easy.
