This 200-level course is designed for individuals who already have a basic foundation of wine (major varietals, how wine is made, basic tasting vocabulary) and are looking to increase their understanding, either for service/sales or for their own interest.
In this series of classes (see below for schedule), we'll cover the world's major wine-producing countries and regions in detail. In addition, we'll practice professional wine service and review the language of wine, including blind tasting components. Perfect for: those in the restaurant industry, or anyone interested in studying wine in a more structured environment.

Hosts Rare Tasting of Six Distillates
And Opportunity to Blend Your Own Gin
London-based Sacred Gin crafts its tiny batches from a range of distinctive botanicals via an uncommon technical process, all of which results in an intensely aromatic spirit that has been critically acclaimed. Bottlerocket is hosting a special event with Sacred Gin founder Ian Hart on Thursday, May 16th from 7-8:30pm. Hart will then pour tastes of six different distillates used in Sacred Gin and encourage attendees to blend their own bespoke spirit. Tickets are $25 and include a $15 coupon good for shopping in-store that day. Due to the special nature of this event, a limited number of tickets will be available.
Mr. Hart distills each Sacred Gin botanical separately under vacuum pressure, as opposed to with a traditional pot still at higher temperatures. Greeted with a Sacred Martini, guests will hear Hart describe how he developed this distinctive process, discuss how and from where he sources each of Sacred Gin’s individual botanical ingredients, and answer questions. Attendees will taste six different distillates, including juniper, orris, pink grapefruit and coriander, and craft their own blend. Participants will also explore the various distillates in a larger flavor context by pairing them with salty, sweet and sour snacks.

It is estimated that back in 17th century London, during the infamous ‘Gin Craze’, there were an astonishing 1,500 distilleries in the capital. Today there are only four, the smallest and most unusual being Sacred Microdistillery, located in a family home in Highgate, north London.
Four years ago Ian Hart was employed in the financial sector and had no experience of the drinks industry but when major client Lehman Brothers went bankrupt in 2008, he decided to pursue his dream of creating the perfect London Dry Gin. He studied historic texts dating back to the 16th century spice trade to develop his unique 12 botanical blend for Sacred Gin and then turned traditional gin production on its head by using vacuum distillation, rather than traditional pot distillation, to create a truly unique spirit. Sacred Microdistillery now also produces Sacred Spiced Vodka, Sacred Organic Vodka, Sacred Gin Blending Kits and Sacred Spiced English Vermouth, made with English wine from Three Choirs Gloucestershire.
