Tom's Winemaking Philosophy
Success in handcrafting wines can only come from using the finest grapes and the best techniques in the artful hands of a skilled winemaker. There are no shortcuts. And when your name is on every bottle, every bottle is your baby. It’s no wonder that quality and attention to detail are our mantras, from the vineyard to the barrel right down to the hand-applied label on the bottle.
Producing less than 1500 cases annually of hillside Cabernet Sauvignon, we strive for elegance, structure and balance to create wines that are approachable now but beg for cellaring. Aging our Cabs two years in French oak plus an additional year in the bottle we believe is an integral part of what makes beautiful wines that are classically balanced and delicious with food.
Making wine has been, and always will be, our passion, our work and our play. But as we dedicate ourselves to quality in our wines, we are acutely cognizant that it’s also about the journey: relationships created, wines shared, concern for our community and the environment; sprinkled with lots of laughter. Our goal is a life well lived, with honesty, humility and integrity, all of which we hope translates into our wine.

At Enkidu, their winemaking techniques are minimalist: we handle the fruit gently and bottle our reds unfiltered and rarely fined. Equally as important are the vineyards where they source their grapes. Their growers utilize methods which show great respect for the fruit as well as regard for the land. All of this feeds into, and is the product of, the passion they have to produce wines. Ultimately, their goal is simple: to make great wines to share with our friends, with the hope they enhance a moment of your day. During this class you will taste the most typical wines Tuscany has to offer. This class has been designed for anyone interested in getting to know / knowing more about Tuscan wines.
You will leave the class knowing your way around the most important Tuscan wines and feeling more comfortable selecting wine at a restaurant and talking about them with friends.
We’ll taste the wines together, learn about the grapes that go into them and why, how they were aged and how long you could keep these wines.
You will be introduced to the Italian wine designation system and learn how that helps you to read the label and to know what wine you have in front of you at the wine shop.
