Reception on the Veranda with tray-passed Hors d'oeuvres and Jansz Premium Brut Rose' Tasmania. First - Fruit De Mer in coconut and fresh curry leaf broth with Pewsy Vale Riesling 2011. Second - Diver Sea Scallop Mousse stuffed in fresh Dover Sole, saffron and shallot cream with Eden Valley Viognier 2011. Third - Texas free-range Pheasant and exotic fall vegetables with The Signature Cabernet-Shiraz Barossa 2006. Fourth - South Texas Antelope Meatballs with saffron rice pulao with The Octavius 2004 Barossa Shiraz. Dessert - Brioche Bread Pudding, Black Currant & Fig Sauce with Yalumba Museum Reserve Muscat and Mysore Coffee.
