Hungry Austinites will relish in five innovative courses designed by chef Kevin Whitton, each uniquely matched with a complementing Uncle Billy’s signature beer, selected by skilled Head Brewer Michael Waters. To get the taste buds dancing, jumpstart the meal with spicy pulled pork on a bacon and cheddar biscuit with pickled red onion, paired with Hill Country Amber. Next, enjoy Agave Wit while feasting on a crisp spinach and frisée salad with smoked shallots, goat cheese, orange zest, and a bacon vinaigrette. Cleanse your already pleased palette with Ax Handle and sorbet as a third course. The entrée of smoked beef tenderloin kicks the meal up a notch with its Hop Zombie IPA demi-glace, parsnip and cauliflower puree, and grilled broccolini, with Hop Zombie to chase it down. Appetites with a sweet tooth will be satiated with a Chocolate Duo of blackberry/coffee truffle and chocolate/rum savarin and the cheers worthy Insomniac Coffee Stout.
